Good waters and mountains in Central Taiwan constitute the great conditions to make fine liquor. The modern equipment and machinery are invested. Premium kaoliang and winter wheat are our sole ingredients. The ingredients are fermented under the traditional method: pure grain in solid pits fermentation. In pursuit of the top quality, the clean thermostatic instrument is set up to keep the fermentation temperature not over 25°C. The finest quality of liquor is attained via the distilling apparatus. Steaming

At the beginning of the brewing process, the grains are cooked to release their starch. This step is fundamental to yeast fermentation; the high temperatures used during cooking convert the starch into fermentable sugars. Controlling the cooking time and temperature is crucial, as it affects the flavor and body of the wine.

Tunnel cooling machine

The liquid after cooking needs to be cooled rapidly to avoid excessively high temperatures negatively impacting the subsequent fermentation process. A tunnel cooler can effectively and quickly cool the hot liquid to a suitable temperature for adding yeast, which is a key piece of equipment to ensure successful fermentation.

Koji adding machine

Adding koji is a crucial step in brewing. At this stage, koji mold is added, which further breaks down the starch in the malt into sugar, providing the sugar source needed for fermentation. The choice of koji mold in this process has a significant impact on the final taste and aroma of the brewed spirit.

Cellaring and fermenting

In this step, the prepared mash is transferred to the fermentation pit and yeast is added. The yeast converts the sugar into alcohol and carbon dioxide. Distilling

After fermentation, the mash undergoes distillation, a crucial step in the winemaking process to separate alcohol and water. The liquid is heated, and alcohol and other components are separated based on their different boiling points. Storing

The distilled spirit is then aged in oak barrels or stainless steel containers. This process affects many aspects of the spirit, including its color, taste, and aroma.
